Description

Despite its name, Aloha Ramen is not a Hawaiian noodle shop. Lorenzo and Raiko Rangel grew up in Japan but lived in Hawaii before moving to Seattle. They're applying Lorenzo's four-star chef's training to simple Japanese noodles -- restricting themselves to just three classic ramen styles: shio (salt), shoyu (soy sauce), and miso (fermented soybean paste), all of which are subtler than the milky, pork-dense tonkotsu broth you'll find at Samurai or Kaname. Of the three, the miso broth is the best, resonating to the higher pitch of fermented soybean paste, the savory broth tinged with sweetness.
