The signature ramen at Ajisen Ramen, an international chain based in Kumamoto and big in mainland China, is its Kumamoto-style ramen: straight noodles in tonkotsu (pork-rib) broth, the bowl topped with seaweed, cabbage, and an egg. The opaque, 10-hour pork broth is capped with a spoonful of an aromatic brown sauce, and its noodles have that bouncing bite that doesn't fade as they soak up the broth. Skip the signature pork ribs for the standard Ajisen ramen, with its meltingly tender slices of braised pork belly. While it's not flawless, the ramen is certainly one of the best dishes in the shopping center's upscale food court. Both the chicken and vegetable ramens (warning: the latter has a seafood broth) are cleaner and lighter, and Ajisen also serves sides like fried rice, gyoza, and fried chicken.
