In addition to serving as San Francisco's butcher-in-residence -- dismembering carcasses at half the city's splashy meat-themed galas and supplying countless restaurants with his high-quality products -- Ryan Farr runs a food stand at the Ferry Building Farmers' Market twice a week. Among other preparations, he sells a stellar burger, uncured hot dogs, and chicharrones (fried pork skins).
