3030 Ocean in the Harbor Beach Marriott is destination dining for tourists and locals alike. Farm-to-table cuisine is a special occasion created by South Florida celebrity chef Dean Max. The menu changes nightly according to what’s available and in season, though offerings might include handmade pasta and duck confit, bacon-based diver scallops, grilled octopus with Dutch potatoes, or salt-block-seared local wahoo. Although the ingredients in each dish may be familiar to diners, the presentation and quality is truly refined, as the price per dish suggests. The food on the plates is transcendent, but the dining room is a marked contrast of beige and monochrome. Still, as more people start paying attention to chef-focused menus and become educated about the farm-to-table ethos, Max says, “the dining market in this area is wide open.”
